Fresh Pesto with Supplant Grain & Stalk Pasta

From date night to lunchtime treats, enjoying Supplant Grain & Stalk Pasta with fresh basil pesto is the most delicious way to make sustainable and nutritious choices! If you don’t have time to make your own pesto, store-bought will work, but we definitely recommend the extra effort for that bright, vibrant, fresh flavor.

Ingredients

½ box of Supplant Grain & Stalk pasta

2 cups fresh basil

½ cup grated parmesan (fresh)

½ cup olive oil

½ cup pine nuts

3 cloves garlic, roughly chopped

1 lemon

Directions
  • 1. Cook Supplant Grain & Stalk pasta in a pan of salted, boiling water, for 10-12 minutes.
  • 2. Whilst the pasta is cooking, add the basil and pine nuts into a blender and pulse until finely chopped.
  • 3. Add the parmesan, garlic, and juice the lemon into the blender, and continue to pulse until well mixed.
  • 4. Whilst the blender is on, slowly pour the olive oil in until a sauce is formed. You may have to push the pesto down from the sides of the blender.
  • 5. Taste the pesto and season with salt and pepper to your liking.
  • 6. There will be plenty of pesto, so bottle up and keep in the fridge.
  • 7. When the pasta is ready, drain away the water and put into a mixing bowl.
  • 8. Add 3 heaped tablespoons of pesto (or more if you love it!) to the pasta and mix well.
  • 9. Serve up with freshly grated parmesan and black pepper.
